Abstract:
This paper performed preliminary research for the antioxidant efficacy in vitro of peanut peptides. Peanut peptides exhibit increasing strong scavenging activity to DPPH and good doseeffect relationship with the increase of concentration. Peanut peptides show lower reducing capability than vitamin C and have definite reducing capability with the increase of concentration. Antilipid peroxidation capability determination of peanut peptides shows good dose dependent relationship in range of 0.2~6.4 mg/mL and better inhibiting effect to yolk lipoprotein lipid peroxidation.
