Antioxidant efficacy in vitro of peanut peptides

Abstract:

       This paper performed preliminary research for the antioxidant efficacy in vitro of peanut peptides. Peanut peptides exhibit increasing strong scavenging activity to DPPH and good doseeffect relationship with the increase of concentration. Peanut peptides show lower reducing capability than vitamin C and have definite reducing capability with the increase of concentration. Antilipid peroxidation capability determination of peanut peptides shows good dose dependent relationship in range of 0.2~6.4 mg/mL and better inhibiting effect to yolk lipoprotein lipid peroxidation.
