Preparation and antioxidant activity of walnut oil microemulsion

Abstract:

      We prepared O/W walnut oil microemulsion with walnut oil and isoamyl acetate (1:1,w/w) as oil phase, EL35 and Tween 80(8:2,w/w) as surfactant phase. The O/W microemulsion was remarkably stable from 25 ℃ to 60 ℃. The diameter of  O/W microemulsion droplet increases with the increase of walnut oil content. Rheological study shows that microemulsion sample is pseudoplastic fluid with  shear thinning behavior. Walnut oil microemulsion has obvious scavenging activity to O-2, and IC50 value is 0.090 3 mg/mL.
