高黏度糖料蒸汽加压雾化特性及雾滴分布规律实验研究

Experimental study of steam-assisted atomization characteristics and droplet distribution of a high-viscosity sugar solution

摘要: 为探究高黏度糖料雾化过程及雾滴演变规律,基于光学测量原理,采用激光衍射法与高速成像技术,研究料液温度及引射压力(pg)等参数对高黏度糖料蒸汽加压作用下雾化特性影响。结果表明:料液温度由20 °C升至60 °C时,糖料动力黏度呈“降低-升高-降低”的非单调变化特征,表面张力则随温度升高由72.66 mN/m逐渐降至62.05 mN/m。雾滴索特平均直径(SMD)在30~90 μm范围内先减小后增大,雾滴扩散范围则先增大后减小。料液质量流量qm=42 kg/h时,pg由0.10 MPa增至0.35 MPa,雾滴粒径整体呈细化趋势,pg=0.30 MPa时雾滴粒径最小,扩散范围最大。研究揭示了溶液物性参数与操作条件协同作用下高黏度糖料蒸汽雾化机理及微小雾滴演变行为调控规律。

Abstract: To investigate the atomization process and droplet evolution behavior of a high-viscosity sugar solution, optical measurement techniques were employed. Based on optical measurement principles, laser diffraction and high-speed imaging were used to examine the effects of solution temperature and injection pressure (pg) on the atomization characteristics of the solution under steam-assisted pressurization. The results showed that, as the solution temperature increased from 20°C to 60°C, the dynamic viscosity exhibited a non-monotonic decrease–increase–decrease trend. In contrast, the surface tension gradually decreased from 72.66 to 62.05 mN/m with increasing temperature. Under the combined influence of these properties, the Sauter mean diameter (SMD) of the droplets first decreased and then increased, varying within the range of 30–90 μm. The droplet dispersion range also increased initially and then decreased. When the liquid mass flow rate was maintained at qm = 42 kg/h and pg was increased from 0.10 to 0.35 MPa, droplet size exhibited an overall decreasing trend. At pg = 0.30 MPa, the minimum droplet size and maximum dispersion range were obtained. These findings reveal the steam-assisted atomization mechanism of high-viscosity sugar solutions under the coupled effects of solution properties and operating conditions and clarify the evolution behavior of fine droplets.
